Moroccan pancakes (Msemmen)


Ingredients for 8 people


650g of flour.

1 teaspoon of salt.

350ml lukewarm water.

50g of melted unsalted butter.

40cl of sunflower oil.



Put the flour + salt + lukewarm water in a machine or knead by hand. Mix everything for 6 minutes. If the dough sticks add flour.

Divide into 8 balls.

Form cylinders. Then place them on an oiled baking sheet, and coat them with the oil + butter mixture. Leave to rest for 20 minutes. Spread the dough of the cylinder and flatten it while coating it with the butter / oil mixture to the end. Gradually roll the dough in on itself to obtain a kind of large nems shape.

Once the “nems” are obtained put in a vertical position and flatten just a little. Let stand 30 min. Finally, flatten properly with the palm of your hand. Brown them for 5 minutes on each side.
