- Shrimp Briouat
SHRIMP BRIOUAT
Ingredients :
- 1 kg of shrimp.
- 2 eggs.
- 80g of butter.
- 80g of flour.
- 80g grated cheese.
- 1/2 litre of milk.
- 24 sheets of filo pastry
- 2 lemons.
- 1/2 bunch of fresh coriander, chopped.
- Crushed garlic (according to taste).
- 1 tsp ground cumin.
- Salt, pepper.
- Oil for frying.
Preparation :
Boil the shrimp for 5 min, then drain and peel them. Prepare a bechamel by melting the butter, add the flour, mix well and gradually add the milk until you get a thick and consistent mixture. Season according to taste.
Mix the shrimp with the béchamel, add the cheese, the eggs and the chopped coriander. Place a good tablespoon of the preparation in the centre of a filo sheet, fold the two sides towards the centre (overlapping them), then roll the sheet to form a large cigar. Proceed in the same way until the shrimp bechamel is used up. Fry, then serve hot with lemon slices.
