Baghrir with honey


  • 500 g of very fine semolina.
  • 2 eggs.
  • 2 sachets of baking powder.
  • 1 cube of baker's yeast.
  • 100g of butter.
  • 100g of honey.


Place the semolina in a mixing bowl. Make a hole in the middle. Pour in the salt, baking powder, crumbled baker's yeast and eggs.

Start whisking the dough. Add warm water as you go, while continuing to whisk.

Pour the preparation into the bowl of the food processor. Mix until a smooth and homogeneous pale-yellow cream is obtained. Transfer to a salad bowl. Let it stand 20 minutes on a corner of a warm hotplate.

Dry heat a small non-stick pan. Pour a small ladle of dough into the hot pan. Cook the pancake on one side only, until it is firm and looks like a "honeycomb" of uniform pale-yellow colour.

Melt the butter in a small saucepan. Let it sit for a few moments. Then pour it through a sieve, leaving a maximum of deposit at the bottom of the pan. Mix the clarified butter with the honey.

Just before eating, quickly dip each pancake in honey butter. Eat lukewarm.
